These golden-hued snacks offer a delightful contrast of textures, featuring a crisp, airy exterior that yields to a tender, savory interior. Infused with rich cheese flavor and subtly seasoned, they are typically baked or air-fried to achieve their characteristic puffed form. A sprinkle of fresh chives adds a delicate aromatic finish.

Ingredients

Scale
  • 1 cup water
  • 1/2 cup unsalted butter, cut into pieces
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 1/2 cups grated hard cheese (such as Gruyere or sharp cheddar)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh chives, finely chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or your air fryer to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease your air fryer basket.
  2. In a medium saucepan, combine the water, butter, and salt. Bring to a rolling boil over medium-high heat, stirring until the butter is melted.
  3. Remove the saucepan from the heat and immediately add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.
  4. Return the pan to low heat and cook, stirring constantly, for 1-2 minutes to dry out the dough slightly.
  5. Transfer the dough to a large mixing bowl or the bowl of a stand mixer. Let it cool for 5 minutes.
  6. Add the eggs one at a time, beating well after each addition until fully incorporated and the dough is smooth and glossy. The dough may look curdled at first, but keep mixing.
  7. Fold in the grated cheese and black pepper until evenly distributed.
  8. Using two spoons or a piping bag, drop or pipe tablespoon-sized mounds of dough onto the prepared baking sheet or into the air fryer basket, leaving some space between each puff.
  9. Bake in the preheated oven for 25-30 minutes, or air fry for 15-20 minutes, until the puffs are golden brown, puffed, and firm.
  10. Garnish with fresh chives immediately before serving.

Notes

Ensure each egg is fully incorporated into the dough before adding the next to achieve the correct texture.

Avoid opening the oven or air fryer door during the first 15-20 minutes of cooking to prevent the puffs from deflating.

For optimal flavor and texture, serve these cheese puffs warm directly from the oven or air fryer.

Experiment with different types of hard cheese to vary the flavor profile, such as Emmental or Parmesan.
