Golden-brown tortillas encase a savory filling of tender white beans simmered in a rich tomato-based sauce, complemented by melted cheese. Cooked to a perfect crisp in the air fryer, they are finished with a vibrant medley of fresh diced tomatoes, fragrant herbs, and a cooling drizzle of creamy topping, creating a satisfying and wholesome meal.

Ingredients

  • Small flour tortillas: 4-6
  • Canned cannellini beans (white kidney beans), rinsed and drained: 1 (15-ounce) can
  • Salsa or crushed tomatoes: 1/2 cup
  • Shredded cheese (Monterey Jack, cheddar, or a blend): 1 cup
  • Olive oil or cooking spray: For brushing
  • Cumin: 1/2 teaspoon
  • Chili powder: 1/2 teaspoon
  • Garlic powder: 1/4 teaspoon
  • Salt: To taste
  • Black pepper: To taste
  • For serving:
  • Diced fresh tomatoes: 1/2 cup
  • Fresh cilantro or parsley, chopped: 2 tablespoons
  • Plain Greek yogurt or sour cream: 1/4 cup

Instructions

  1. In a medium bowl, combine the rinsed white beans, salsa (or crushed tomatoes), cumin, chili powder, garlic powder, salt, and pepper. Mash about half of the beans lightly with a fork to create a creamier texture while leaving some whole for bite.
  2. Lay out a tortilla. Spread about 1/4 cup of the bean mixture over one half of the tortilla, leaving a small border. Sprinkle with about 1/4 cup of shredded cheese. Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat with remaining tortillas.
  3. Lightly brush both sides of each quesadilla with olive oil or spray with cooking spray.
  4. Preheat your air fryer to 375°F (190°C).
  5. Place 1-2 quesadillas in the air fryer basket in a single layer, ensuring they do not overlap. Cook for 6-8 minutes, flipping halfway through, until golden brown and crispy, and the cheese is melted. Cooking time may vary depending on your air fryer model.
  6. Remove from the air fryer and repeat with any remaining quesadillas.
  7. Slice each quesadilla in half or into wedges. Serve immediately, topped with diced fresh tomatoes, chopped cilantro or parsley, and a drizzle of plain Greek yogurt or sour cream.

Notes

For extra crispiness, ensure the tortillas are lightly oiled or sprayed before air frying.

Adjust the spice level of the bean filling by adding a pinch of cayenne pepper or a dash of hot sauce.

Any type of white bean (navy, cannellini, great northern) can be used for this recipe.

Leftover quesadillas can be reheated in the air fryer at 350°F (175°C) for 3-5 minutes until warm and crispy.
