  • 2 slices ciabatta bread or rustic bread
  • 1 large ripe tomato, thinly sliced
  • 4 oz fresh mozzarella, thinly sliced
  • 68 fresh basil leaves
  • 1 tablespoon olive oil
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Preheat a panini press or a grill pan over medium heat.
  2. Lightly brush one side of each slice of bread with olive oil.
  3. On the un-oiled side of one slice of bread, layer half of the mozzarella slices, followed by the tomato slices, fresh basil leaves, and then the remaining mozzarella. Season lightly with salt and pepper.
  4. Place the second slice of bread on top, oiled side facing out.
  5. Carefully place the assembled panini into the preheated panini press or grill pan.
  6. Grill for 4-6 minutes, or until the bread is golden brown and crisp with visible grill marks, and the mozzarella is melted and gooey.
  7. Remove from the press, let it rest for a minute, then slice in half and serve warm.
